We've got a sandwich cut into letter shapes with the Wilton 50 Piece ABC & 123 Cookie Cutter Set
Under each letter, we have a corresponding side item
A = apple sauce
B = bananas
C = carrots & ranch

I like how everyone takes it a different direction - I didn't think about using foods that start with the letter.

You could also do numbers if you have the cookie cutters for them. 1 sandwich, 2 carrots, 3 strawberries, etc. When you get to 10, you'll have to do something little that they like, 10 blueberries, or 10 pieces of popcorn.
