Oatmeal Cranberry White Chocolate Cookies


2/3 cup butter or margarine, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 6-ounce package Ocean Spray® Craisins® Original Dried Cranberries
2/3 cup white chocolate chunks or chips

Preheat oven to 375ºF.

Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chunks.

Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.

Makes approximately 2 1/2 dozen cookies.

How funny, I made these the other day too. Mine didn't flatten out like yours -- they stayed pretty much in the shape I dropped them on the sheet. But they were pretty yummy. For me. Not so much the girls.

mmm, these were so good. I'm gonna have to make them for special treats for good school days. Mason loves Craisins.

I just made these too and they also stayed in the same shape I dropped them in. Could it be our temp is too high? (Thinking my oven cooks hotter?)Mine were also more dense than Vanessa's, but not sure if that's because the cookies didn't flatten. Either way, no matter what they look like, they are tasty.

The difference may be that I used 1/2 cup of real butter & the rest margarine. Other than that, I can't imagine what would have made the difference in shape.

So I made these cookies tonight. I used real butter. I used a silicone baking sheet on top of my brand new cookie sheets. The cookies came out like yours do. The silicone baking sheets are great! I love that the cookies didn't stick, they didn't burn and my cookie sheets don't need to be washed. :)
