Turkey Burgers

1 1/2 pounds ground turkey
1 1/2 tablespoons dry onion soup mix
1/2 teaspoon ground black pepper
1 tablespoon dried minced garlic
1 1/2 tablespoons soy sauce
1 egg, lightly beaten (optional)
6 hamburger buns, split

In a large bowl, mix the turkey with the onion soup mix, pepper, garlic powder, soy sauce, and egg. Refrigerate the mixture about 10 minutes, then form into 6 patties.

Preheat the grill or frying pan for medium-high heat.

Lightly oil the grill grate or frying pan. Place the patties on the grill. Cook for 20 minutes, turning once, or until well done. The inside of the burgers will look whitish in color when cooked through. Serve on bun with desired burger toppings.

Chicken Cesar Tacos/Wraps


Chicken breasts
Romain lettuce
Parmesan or Italian blend cheese
Cesar dressing
Croutons, optional
Soft taco sized tortillas (for tacos) or large tortillas (for wraps)

Grill chicken breasts (I prefer to spray a frying pan with olive oil & salt & pepper my chicken...takes about 20 minutes on the stovetop).  While the chicken is cooking, wash & prepare lettuce in a large bowl.  Once cooked through, cube chicken and add to the lettuce mixture.  Add in desired amounts of cheese and croutons and toss with dressing.  Top desired tortillas with the salad mixture and enjoy!

I used the Marie's Yogurt Parmesan Cesar dressing (1/2 the calories & 1/2 the fat of regular) and we are huge fans!!

Buffalo Chicken Sandwiches

4 frozen skinless, boneless chicken breasts
1 (17.5 fluid ounce) bottle buffalo wing sauce (Frank's Red Hot)
1/2 (1 ounce) package dry ranch salad dressing mix
6 buns, rolls, or flatbreads
Ranch or blue cheese dressing
Mozzarella cheese, shredded

Place frozen chicken breasts in crockpot and top with ranch mix and entire bottle of buffalo sauce. Cook 6 hours on low. Using 2 forks, shred chicken at least 30 minutes before serving. Spread dressing on both halves of each bread serving, top with chicken & cheese. Enjoy!

You can make extra chicken to be used for Buffalo Chicken Pizza :)

BBQ Chicken Sandwiches

inspired by the Red Robin Whiskey River BBQ Chicken Burger

Chicken Breasts (boneless, skinless)
BBQ Sauce
Buns
Lettuce, shredded (optional)
Tomato (optional)
Cheddar Cheese, sliced (optional)
Mayo or Ranch Dressing
Crispy Onions/Onion Straws

Place frozen chicken breasts in crockpot and top with a bottle of BBQ sauce. Cook 4 hours on high or 6 hours on low. Using 2 forks, shred chicken about 20 minutes before serving.

Assemble sandwiches with desired ingredients.

The chicken can be cooked on a BBQ grill or cooked in the oven and then topped with BBQ sauce, but we have found that our favorite, most flavorful (and easy) way is in the crockpot. You can make this for as many as needed...we even made a HUGE batch in a roasting pan for the boys 1st birthday party.

Chicken, Bacon, Avocado Sandwich

1 hamburger bun
Mayonnaise or ranch dressing
1 chicken breast, cooked
1 slice of swiss cheese
3 slices of bacon (we use turkey bacon)
1/4 avocado, sliced

Spread both side of the bun with mayo or ranch. On the bottom of the bun place cooked chicken, cheese, bacon and avocado followed by the top of the bun. Enjoy!

We use whole wheat buns and have used both grilled and breaded chicken. We usually use non-fat swiss and light ranch. These are delicious and easy!

Greek Chicken

2 tbsp. olive oil
4 boneless, skinless chicken breast fillet
1 med. onion, thin sliced
1 tsp. salt
1/2 tsp. pepper
1 tbsp. white wine vinegar
1 1/2 tsp. chives, chopped


Pour olive oil into a nonstick fry pan. Heat 2 minutes on medium heat. Add chicken and cook about 6 minutes. Turn chicken over, add onion and cook about 6 more minutes or until onion is clear and chicken is tender. Remove from heat. Cut chicken into thin slices across grain of breast and place in a bowl. Add sauteed onion. Sprinkle with salt and pepper, mixing carefully. Add wine vinegar and chives and mix well. Chill for at least 2 hours.


Makes 4 servings


This chicken is delicious! You can put it in a pita, a tortilla or even on a bed of lettuce for a tasty salad. It is shown in the photo above with a cucumber & yogurt sauce and sprinkled with some feta cheese.

Spicy Crispy Chicken Sandwich Swap

Weight Watchers points = 6
makes 1 serving

3 oz raw boneless, skinless lean chicken breast
1 small hamburger bun (light, if available)
1/2 cup Fiber One bran cereal (original)
1/2 cup egg substitute
2 tablespoons fat-free mayonnaise
2 slices tomato
1 leaf romaine lettuce
1/4 teaspoon cayenne pepper, divided
Dash of salt
Dash of black pepper
Dash of chili powder

Preheat oven to 375

Using a blender or food processor grind Fiber One to a breadcrumb-like consistency. Add half of the cayenne pepper (1/8 teaspoon) to the crumbs and mix well. Place crumbs in a small dish and egg substitute in another.

Sprinkle salt and black pepper evenly on both sides of the chicken. Then coat chicken on both sides - first with egg substitute and then with seasoned crumbs.

Place chicken on a baking pan sprayed with nonstick spray. Top chicken with a mist of nonstick spray and place in oven for 10 minutes.

Flip the chicken over and add another light mist of nonstick spray. Cook for an additional 10 to 12 minutes, until chicken is fully cooked and coating looks crispy.

While the chicken is cooking, combine mayo, the remaining cayenne pepper and the chili powder in a small bowl. Spread half of the mayo mixture on each half of the bun.

On the bun bottom, place chicken, tomato and lettuce, then top with the other half of the bun.

This is a family favorite! For the boys, I omit the cayenne and chili powder. For mom & dad, I don't really measure, I just taste as I go for the level of heat we like. I usually add a slice of fat free swiss cheese. These are awesome and fix my fried spicy sandwich cravings in a flash.
